Ingredients
1 cup dark brown sugar
1/4 cup cornstarch
1/2 teaspoon sea salt
2 cups whole milk
3 large egg yolks
2 tablespoons unsalted butter
1 teaspoon pure vanilla extract
1 pre-baked pie crust (graham or pastry)
Instructions
1. In a medium saucepan, whisk together brown sugar, cornstarch, and sea salt.
2. Slowly pour in the milk while whisking to eliminate any lumps.
3. Set over medium heat, whisking constantly, until the mixture thickens—about 5–7 minutes.
4. In a separate bowl, beat the egg yolks. Slowly add a few spoonfuls of the hot mixture into the yolks while whisking.
5. Return the tempered yolks to the saucepan, stirring gently to blend evenly.
6. Simmer for 1 more minute, then remove from heat.
7. Stir in butter and vanilla until fully melted and smooth.
8. Pour filling into pre-baked crust and smooth the top.
9. Cool at room temperature for 10 minutes, then refrigerate at least 4 hours or overnight.
Notes
Top with whipped cream or a sprinkle of sea salt for an elevated touch.
For a lighter version, substitute coconut sugar and almond milk.
