Lemon oatmeal no bake cookie recipe made with oats, coconut oil, lemon zest, and honey. A quick, zesty, and healthy no-bake snack.
Ingredients
2 ½ cups quick oats
½ cup coconut oil or unsalted butter
⅓ cup honey or maple syrup
1 tbsp lemon zest
2 tbsp lemon juice
1 tsp vanilla extract (optional)
Pinch of sea salt
Optional: ¼ cup shredded coconut or white chocolate chips
Instructions
1. In a saucepan over medium heat, melt the coconut oil and honey until just bubbling.
2. Remove from heat. Stir in lemon juice, lemon zest, vanilla, and salt.
3. Add quick oats and stir until fully coated.
4. Let the mixture rest for 2–3 minutes to thicken slightly.
5. Scoop spoonfuls onto a parchment-lined tray.
6. Flatten each slightly with the back of a spoon.
7. Refrigerate for 30 minutes or until firm.
8. Store in an airtight container in the fridge for up to 10 days.
Notes
Use certified gluten-free oats if needed.
Coconut oil makes this dairy-free.
Add-ins like chia seeds or hemp hearts increase nutritional value.
